These are like an apple crumble all in one. I can’t describe how much I hit the jackpot with these. Plus, they’re vegan, gluten free (if you use gluten free oats) and super easy to make.
They’ve pretty much become a staple in our house due to the fact I can whip them up quickly and eat them pretty much straight from the oven.
Preheat oven to 200ºC (or 180ºC for fan ovens)/gas mark 6.
Makes 8 flapjacks
2 apples, peeled
200ml maple syrup
1/2 tsp cinnamon
100g coconut oil
Pinch of salt
Chop the apples into small pieces and place in a saucepan with the maple syrup. Cook them over a medium heat, stirring every few minutes. Once the apples are cooked, mash them with a potato masher and stir in the coconut oil until melted.
Pour this mixture over the oats and salt and mix throughly. Pour into a tin lined with greaseproof. Cook for 10-15 minutes.
Leave to cool. Cut up into eight slices. Store in an airtight container.
